There are many versions of a traditional Polish breakfast, but none have that perfect spring vibe like twarożek You can use a wide variety of veg and herb in it, but my go-to mix is peppery radish, cool cucumber, and heaps of chive and dill. Served with a thick slice of sourdough of course!
Traditionally it’s made with farmer’s cheese, but I decided to try it out with full-fat cottage cheese. I have to say, I was very pleased with the results.
My mother, who moved to the United States when she was in her 30s, commented that my version looks very similar to the breakfasts she enjoyed as a little girl growing up in Poland.
I realize that this breakfast is a little bit different than what we are used to in the United States. Whether you’re a cereal junkie or an avo toast aficionado, I encourage you to try this delicious and nourishing breakfast.
Kimchi Jjigae (Korean Kimchi & Tofu Stew)
This recipe is inspired by my current audiobook listen, Crying in H Mart, by Michelle Zauner. This memoir is an unabashed look into her experiences growing up a Korean American, losing her mother, and finding her identity. One aspect that is consistent throughout the book is food and how deeply entwined it is to Korean culture. I think this is also true for all cultures. Which is one of the reasons why food deeply interests and inspires me. I think this is a beautiful book and I highly recommend it.
