Turkey Chili Verde

This flavorful chili is a spin on classic Mexican pork chili verde

Packed with veggies, protein, and fiber, this recipe is the perfect easy weeknight meal. Instead of relying on cream or other thickeners, this chili gets its rich texture from the addition of blended beans.


  • Makes: 8-10 servings

  • Prep time: 30 minutes

  • Cook time: 4 hours on high or 6 hours on low


Tools

  • Instant Pot or slow cooker

  • Blender or immersion blender

  • Veggie dicer

Ingredients

  • 24 oz turkey breast

  • Avocado oil

  • Water or broth

    • As needed to adjust consistency

  • 3 cans white beans

    • 1 can blended smooth with 1/2 - 1 cup water or broth

    • I recommend rinsing the beans to reduce sodium

  • 1 white onion, diced

  • 12 cloves garlic, minced

  • 1 can green chiles - 4 oz

  • 1 jar salsa verde - 15.7 oz

  • 2 poblano peppers, diced

  • 2 yellow bell pepper, diced

  • 1 cup frozen corn

  • 1 tablespoon ground cumin

  • 2 teaspoons chili powder

  • 2 teaspoons dried marjoram

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon ground white pepper

  • Salt & pepper - to taste

  • Limes

    • Juice from 1/2-1 lime added to chili and slices used for garnish

  • Cilantro

  • Avocado, diced

  • Cheese, shredded

    • I used jalapeño havarti


Directions

1.   Blend 1 can of beans + broth/water using an immersion blender

2.   Sear turkey breast:

  • Do this in a pan or on the “sauté” setting on an instant pot

  • Don’t cook all the way through, just to get some browning for added flavor

  • No need to cut up, you will shred it later on, so big pieces are easier to deal with

3.   Sautee onion and garlic:

  • Sauté onion first, until translucent. Then, add garlic and sauté until fragrant 

4.   Add the rest of the ingredients to instant pot:

  • Including the whole beans AND blended beans 

  • Except the lime juice/limes, cilantro, avocados and cheese

5.   Give it a stir + Slow cook it:

  • Make sure Turkey is completely covered

  • Cook everything on high for 3-4 hours or low for 6-7 hours

6.   Shred turkey:

  • Remove the turkey from your slow cooker, shred it, and then add back to the slow cooker

7. Season & enjoy! 

  • Stir in lime juice

    • Start out with juice From 1/2 lime and adjust to taste

  • Add salt & pepper or kick up the spice to taste

8.   Serve: 

  • With shredded cheese, cilantro and avocado

  • Excellent to serve with rice, corn chips or warm tortillas
